One wide view spread out would behave similarly to a single monitor use case. The CPU overhead should be about the same since there is only one view (though there may be a bit more overhead because the FOV will be wider and more items will draw). The GPU overhead at in terms of pixel/raster fill rate will be tripple that of the single monitor case, so SLI should scale at least as well as it did in the one monitor use case.

If I ve right understood P3D is able to make good use of 8gb graphic memory so it wouldn't be a mistake to get one if I want my spending make sense, confirmed ?

I have not personally seen any Prepar3D use case accessing more than 5GB of graphics memory. I don't believe our application can request more than 4GB as a 32 bit app. Memory usage beyond 4GB is likely coming from Windows back-buffers and other applications.
