As the title states there is no single engine time category on the logbook flight pages. Just day, night, non-inst., inst., and multi.
Is it just me or does anyone else have this issue?

Well... I would say the question is in the wrong direction...
The stock logbook records it when you are flying a multi-engine aircraft. Single engine flights will be the difference between total hours and ME hours.
If you are looking for some additional program to view and/or edit your logbook an other way, you can check for LogEdit3 (a freeware) on the usual websites for flight simulations addons.
