Is there any way in P3D to create an realistic roll and stop behavior for an Aerobatic Plane, eg. that it stops rolling immediately when you move the stick back to the neutral position, and also allow roll rates of 400° per sec. ?

You did not mention you looked into the .air files.
For the increased roll rate you need to experiment with:
Elevator effectiveness scaling
Aileron effectiveness scaling
Rudder effectiveness scaling
which will make the control surfaces more effective and can also create better controllability.
For the general stability you need to change variables in the first section of the file, but seriously, you will have to understand the math behind it to really purposefully increase the stability without any side effects.
