Default plane and exiting a flight

Can you change the default plane from raptor to say pmdg 737

Is there a way when I am done flying to get back to the start up page where you choose the airplane

No.

PMDG needs the default LM P3D aircraft as your default flight.
Read your PMDG Flight Manuals Introduction pdf document.

After every flight or test exit P3D , reboot the PC and then start P3D again.
