Absolutely thrilled that you guys have stepped up to keep this amazing platform alive and are releasing updates!! This is a long shot as I understand it requires a major amount of work but.... does version 1.1 leverage multi GPU graphics cards, or shall we stick to single GPU cards for best graphics quality?

We made some performance tweaks, bug fixes, and updated some shaders to SM 3.0, but the core rendering system is as it was in v1.0. That said, there are advantages to multi-gpu systems in multi-monitor scenarios. (mostly at the driver level). I can't talk about the road map for v2, but we've got some passionate graphics devs on the team and we're keeping ourselves busy.
