Perhaps the custom FOV got saved into your scenario. Try loading the default scenario, or re-saving your scenario after you have entered and exited vr.

For now, there is a manual workaround you might want to try. Switch out of full screen and maximize the undocked windows to force them to fill their displays. Then go back into full screen to remove the borders.

Make sure you log out and back in and/or reset your pc after making changes to DPI/Text size. Prepar3D is a DPI aware application so the OS should not be scaling it. I've got a few follow up questions. What version of windows are you running? Are you using DPI/Text-Size scaling settings? Does exiting and re-entering full-screen fix the issue?

Which version of the Oculus driver/runtime? Which graphics driver? I recall getting a report about bank being incorrect on Oculus but it was related to the a GPU or Oculus driver and resolved itself after updates. There are some known driver versions and oculus home versions that don't work together.
